Quick and easy savoury muffin recipe with plenty of sneaky veggies for your little one or lunch boxes. If you are a planner like I am these would also be great to freeze for another day. I made these ones today while my little man was up in his highchair having lunch… woohoo fuss free cooking.

Ingredients:

1 Medium Zucchini – Grated
1 Medium Carrot – Grated
1/4 Cup Peas – Tin or frozen
1/4 Cup Corn – Tin or Frozen
1/4 Cup baby spinach – Roughly chopped
1/2 Medium Onion – Finely chopped
1/2 Cup Ham – Or cold meat of your choice
1 Cup Cheddar Cheese – Grated
1/2 Cup Milk
1/4 Cup Plain Greek Yoghurt
1/4 Cup Olive Oil
2 Eggs
2 Cups Plain Wholemeal Flour
3 Tsp Baking Powder


Method:

Step one: Preheat oven to 180C

Step two: Place grated zucchini and carrot into a clean tea towel, twist and squeeze out juice. Or place between sheets of paper and press.

Step three: Place zucchini and carrot into bowl, add in the peas, corn, spinach, ham, cheese, milk, yoghurt, oil and egg. Stir until combine.

Step four: Mix flour and baking powder together then add to wet ingredients gradually. Be sure not to over-stir as this will make the muffins tough.

Step five: Spray a muffin tray, today I used a mini muffin tray and a regular muffin tray for left over mixture. Be sure to thoroughly spray tins so the mixture does not stick. Spoon mixture into muffin trays equally. Don’t forget they will rise so don’t overfill.

Step six: Bake for 20-25 minutes until golden brown on top and a skewer comes out clean.

Allow to completely cool before storing. Can be stored in the freezer for 2-3 months – wrap in foil or cling wrap then pop in zip lock bag.

Enjoy! Hope you enjoy these as much as my little man does. These muffins are so versatile and can be made with any veggies at all. If your children really don’t like a particular veggies this is either a great place to hide them or take them out and add in more of something else. For anyone out there doing baby led weaning this is a great way to get veggies in your little ones diet while they learn to eat. I personally love baby led weaning and my child has refused to let me feed him with a spoon since he was about 6 months old.
